Wild Alaskan hook and line caught King is some of the best fish you can find in the Northern Pacific Ocean.
Each fish is pulled in on a hook and line from a depth of 200-500 feet, mechanically pressure bled, head and gutted, and then flash frozen at sea. This kind of freshness and quality is extremely hard to get and the first fish of the year caught by this method is auctioned off in Seattle as one of the most highly prized fish of the year. 
We just made this fish connection and as Kodiak doesn’t have a strong Chinook (King) run, this is our first connection outside of Kodiak. We are really excited to bring you this opportunity!

I normally only offer fish caught in season but I flexed this time because of the extreme care that is given in maintaining the highest possible standard. These fish were caught last fall but were processed this season by my cannery. My cannery lead said they had a thick ice glaze meaning they had never been thawed before. Any slight burn was trimmed away and the fillets had a 95 percent scale retention which are all signs of amazing quality fish. 
Each piece is between 6-10 oz.
