These fish are caught in southeast Alaska and brought straight to Cook Inlet for processing!
This king is PBI which means pin bone in. This means there are about 25 long flexible bones in the belly side of the meat. The hard core Alaskans eat them but I just pluck them out after cooking! Let me know if you have any questions!
